The Tempering stage can be divided into 4 sections:
1. The first temperature zone cools the high-temperature paste to 31 ℃ to make the fat produce crystal nuclear;
2. The secondary temperature zone cools the 31℃ paste to 29℃,and crystal form is gradually produced;
3. The third temperature zone cools the 29 ℃ paste to 27℃, and the proportion of crystal increases, and some of them become stable crystal forms;
4. In the fourth temperature zone, the paste at 27℃ will rise to 29~31℃, and the unstable crystal form below 29℃ will melt and retain the stable crystal form.
